Time to be shellfish: why the UK should go back to feasting on oysters and mussels Popular in Victorian times, they are sustainable, a good source of protein and brilliant for biodiversity, say those championing the bivalvesA splash of white wine, a handful of basil leaves and a few minutes preparation are all it takes to transform mussels that 24 hours ago were filtering seawater off the south Devon coast, into a delicious starter. At the training kitchen in Londons oldest fish market, Billingsgate, in Poplar, we learn that fresh mussels require two vital preparation steps that the vacuum-packed, cooked variety dont: debearding or pulling off the byssus thread that attaches the shell to rocks and other substrate, and the discarding of any with broken or open shells Continue reading... ...

Humphreys world: how the Samuel Smith beer baron built Britains strangest pub chain Since the 1970s, Humphrey Smith has acquired scores of pubs and historic properties around the UK. But time after time, he has left the buildings empty. Why has he allowed his empire to moulder? In early September 2022, Alivia Bienko and her husband, Liam, were driving through Stamford Bridge, an idyllic village on the River Derwent, near York, when a shuttered pub caught their eye. Stuck to one of the windows was an A4 sheet advertising for a couple to live in and manage the pub. On the advert was a mobile number for Samuel Smith, the brewery that owned the pub. Founded in 1758, Samuel Smith Old Brewery is one of the largest family-owned brewery and pub operations in the UK. Bienko had experience in hospitality, and she and Liam were open to a change. They decided to look into the job.Online, they came across a few stories of couples who had been thrown out of their jobs running Samuel Smiths pubs, largely for missing money or missing beer, Bienko said. Nothing unusual about that. But when the couple dialled the number on the advert, they were surprised to find themselves speaking to Humphrey Smith, the stupendously wealthy chairman of the company, who has been in charge since the 1970s. He said, I can come and meet you tomorrow, Bienko told me. It was very odd and we were very nervous, because we were living in a small caravan and here was a millionaire coming to visit us. I dont deal in nonsense: Tulisa on revenge porn, tabloid stings, celibacy, success and survival After a stint on Im a Celebrity, the N-Dubz singer is preparing for her next act. She discusses the trauma she has lived through and why she still has faith in the futureWhy does anyone go on Im a Celebrity Get Me Out of Here!? Sometimes theres an obvious reputation-washing agenda, which annoyingly seems to work people who are really hated come out more popular (Matt Hancock, for example). Other times it looks as if they need the money. For Tulisa, born Tula Paulinea Contostavlos 36 years ago in north London, her recent stint sounds more like aversion therapy. I had a lot of fear surrounding exposure, she says, and I got to the point where I thought: Am I holding on to this fear because of what people have done to me in the past? Am I letting other people change my perception of what my career is and could be? I didnt want to feel that way any more.It wasnt really about winning (she got voted off in week three) and, as for the rest, the result was inconclusive. She didnt stick around to watch the winner crowned, as is customary, but flew home from Australia early, overwhelmed. I came out, still followed by cameras, all tits and teeth, and it wasnt until I was on my own that I felt this introvert-overload. I was hyperventilating, crying. It was too much. She was never able to determine, Is this about a fear I have of being in the spotlight? Or is the person Ive become just not the kind of person that wants fame any more? Continue reading... ...

The Christmas that went wrong: I was hungover so I bought everyone in my family a Moby CD A terms worth of techno clubs and afterparties at university in Glasgow didnt do much for my education or my choice of Christmas giftsWhen I left the north of Ireland for the University of Glasgow 20 years ago, I threw myself into the citys hard?partying lifestyle with all the vigour you would expect of a Presbyterian pastors daughter raised amid the weirdness of 1990s Belfast. My first term was a whirl of dancing to techno music in railway arches and warehouses, making new friends at 10am at afterparties in the kitchens of tenement flats. I slept on strangers carpets, wrapped in my massive leopard-print faux-fur coat from a vintage store called Starry Starry Night. I wore a fluffy hat that doubled up as a pillow. I barely ate anything solid and rarely saw daylight not that Glaswegian daylight is anything to write home about. After a particularly wild week of parties turning into afterparties turning into pub daytime sessions turning into parties again, I woke up to the realisation it was 23 December, term was over and I had to catch my train to the ferry and home for Christmas. As I threw jumpers and odd socks into a grubby American Apparel holdall, it dawned on me that I hadnt bought a single Christmas present. Continue reading... ...

Mt. Fuji access fees to be raised as authorities address overcrowding Climbers using the most popular trail on Mt. Fuji are expected to be slugged with a doubled fee of 4,000 yen ($26) from next summer as the Yamanashi prefectural government seeks to tackle overcrowding, a source close to the matter said Thursday. The prefectural government also plans to move forward the closing time of the entrance gate at the trail's 5th station by two hours to 2 p.m., to discourage overnight "bullet climbing," or trying to reach the summit of Japan's tallest mountain without resting.
